I hope everyone had a happy and safe 4th of July (for those that celebrate). We randomly decided to take a drive in the evening (no chance of going to bed with all the noise of the fireworks) and we ended up seeing a pretty impressive fireworks display at our amenities center. Less than a mile from home, no traffic, no crowds... nice!

Unfortunately, my brother-in-law had an accident on the 4th and was taken to the ER. He had a fall and broke his hip. Ouch! He had hip replacement surgery on Tuesday and is now back at home. I'm sure he has a lot of physical therapy ahead of him but we're all relieved that he's doing so well. 

The big excitement came this week when my team, the Tampa Bay Lightning, won the Stanley Cup in Game 5 of the series Wednesday night! For the second year in a row! I was beyond excited and was practically jumping up and down as they all took to the ice in celebration. Such an exciting series, and exciting season, and it was great fun to get caught up in it all.


I tried a new recipe this week and it was quite the hit. This chicken sandwich is  practically a dupe for Chick-Fil-A sandwiches and they were delicious! We weren't impressed with the sriracha mayonnaise so next time we'll just use regular mayo. These were made in the air fryer and if you're interested you can find the recipe here.

  1. My Mother-in-Law got a hip replacement because she was unable to walk and she is around 62..
    We recently visited and I was so amazed how fast she could to things! I hope it will go just as smooth for your brother-in-law :)

    1. That's great that she recovered so well! My brother-in-law is only 53 so we're hopeful that his recovery is a quick one.

  6. OMG! Your poor BIL. Hip injuries are no joke. Glad he is doing ok. Congratulations on your Stanley Cup win. I am happy your team won. The chicken sandwich looks yummy and you had me at Chick-Fil-A.

  9. Wishing your brother in law a speedy recovery!
    I heard on the news that the Tampa Bay Lightning won the Stanley Cup and I had one of those "how do I know of that team" moments before realising it was your hockey team! My husband was all, "who is Tanya?" when I had my eureka moment, lol. It's weird when those little moments hit. :)

  10. Nice to hear you stumbled upon a nice fireworks display! Hope your BIL has a speedy recovery. That sucks! The sandwich looks delicious! I'm going to look up the recipe. I don't like sriracha sauce so good to know to just use regular mayo. Can you believe I've never eaten at a Chick-Fil-A?

  12. Yikes about your BIL!

    When we lived in FL, the whole neighborhood set them off and they went all out so we just had to sit in our backyard and watch. We went to the ones in the park here 2 years ago but the crowds were crazy this year so we just stayed home and listened to the dogs bark all night at the ones everyone was setting off lol

    I don't have an air fryer yet. I keep debating it. I went with the bread machine and love it. I'll need to clear more counter space lol

  14. Congrats on your team winning the Stanley Cup! I'm so sorry to hear about your brother-in-law but it's good to hear he's on the mend. That chicken sandwich looks pretty delicious. Kind of makes me want to get an air fryer since Chick Fil A is so expensive.

  19. Congrats on your team!! And I am sorry for your brother in law. I know hip replacement is quite a common thing these days but still. Also we are waiting for our fireworks on July 21st.
