No idea why, but it seemed like a looong week. I was so happy to see the weekend roll around. How was your week?
On Wednesday I met my bosses for lunch at 4Rivers and it was a great outing. It was the first time the four of us have been together at the same time in months (since last fall, I think). It was casual without too much work talk and a good time. It was also a bit tricky to stay on track given the menu options but I chose as best I could: smoked turkey, collard greens, a side salad with vinaigrette. When what I really wanted was brisket, mac and cheese and sweet potato casserole. LOL
Speaking of food, I made a breakfast casserole that was a big hit: Sausage & Bacon Maple Biscuit Breakfast Bake. Yum, right? It made six servings so The Husband and I had it three mornings in a row and it reheated just as well as when it was hot out of the oven. This is a "lighter version" (and I made it even lighter by using turkey sausage and almond milk) but you could certainly make it more decadent by using pork sausage and regular milk and syrup.

Yesterday was my younger sister's (Terri's) birthday so me, my mom and my sisters met up for lunch at a local spot that offers outdoor seating. It was the first time the four of us have been together since Christmas and it was the best! I miss being with them so much. Now that all four of us are vaccinated (Terri still has her second dose to go) I can see more get-together's in our future.
Your breakfast casserole was a work of art. Looks amazing! You had so many great get-togethers. What a great week!
ReplyDeleteWell, that's not my photo (I gave credit to the website) But I think mine looked pretty much the same. :) We'll definitely have that again! It was a nice switch from the usual.
DeleteSounds like you had a great week Tanya. I'm happy to read you where able to go out for lunch again. Doesn't it sound great to be able to 'do' stuff again?! I really hope things keep on improving and we'll get our 'normal' back again.

It was great to have a bit or normal... but at the same time, it no longer felt normal. I was hyper aware of who was around me the whole time. That will probably last a long time.
DeleteI love it when I find a recipe that will feed my husband and I for several days that we both really like. I have found that I want to cook a lot less now that my nest is empty. My husband and mother are fully vaccinated and I have one to go. I don't really want to go out a lot but it is nice to feel safe to be with family again. Have a great week!
ReplyDeleteSame here, Carole. Being fully vaccinated has changed very little for me, but I felt like it did allow me to be out (on rare occasion) in an environment that I can feel safe and comfortable in.

DeleteIt was a long week. It sounds like you had a good one. My weekend has been good so far. My daughter had a semi finals soccer game for a cup Friday and they won in PKs (hers went in!), so they play again in the finals this afternoon. Hoping for a win!

I dream of going back to reastaurants! They have been closed for months now here, since November! So good for you to enjoy these small things Tanya! And talking about food, I never could eat meat or onion etc at breakfast when I visited the US or UK . I am more a sweet breakfast person :-)

4Rivers is awesome, Greg! I think they're only in FL and GA, though. So, it's good BBQ, but not drive across the country good. LOL
DeleteIt's nice to feel safer about getting together again! I'm so happy a lot of my family is vaccinated now, too. I love mac and cheese, too, but yeah, it's a lot of calories. I have it once in a while. That casserole looks delicious!

DeleteThat's so lovely that you got to out to lunch with your bosses! It's so hard to eat healthy when eating out. My husbands go to is just grilled salmon with broccoli (if the place has it) lol I'm bad and always end up ordering sometime fried >.< Oh and a second lunch! Yay! I love that things are getting back to normal. Hope you've had a great week :)

DeleteI agree with it being a longer week. I wrapped up working from home and started working on location again on Friday. This week has been an adjustment to say the least. It is crazy how normal working from home became.
